Johns, an energetic, 70‐year old professor at the University of Florida, and it operates from four small rented apartments where mounds of research data that will eventually affect the lives of millions of pupils are stacked on kitchen shelves and tables.

There are a couple of kitchensful of people who have gone out and bought Mastering the Art of French Cooking, the two volume set which Mrs. Child co-authored, and thereupon pronounced themselves ready and able to master the most monumental mousse.
